85% vs. 90 or 93% Lean Hamburger
Our processors tell us that is impossible for them to
make 90 or 93% hamburger from a good young finished steer. 90% to
93% lean comes from old cows and bulls, not young quality beef. This
is why all of our hamburger products are 85% lean. This will not be
the same as grocery store 85% lean hamburger. Grocery store 85% lean
has solid fat trim added in with the hamburger. Our hamburger is 85%
lean because of the marbling found in high quality beef. This marbling
melts away keeping the meat tender and moist as it cooks.
Beef Quarters and Halves
All CVB Quarters and Halves are sold on the dressed
weight at the locker plus processing costs. Dressed weight is chilled
weight at the locker, before it is processed into specific cuts the
buyer has chosen.
Example:
Whole beef dressed weight about 800#
½ beef dressed weight about 400#
¼ beef dressed weight about 200#
Consumer actually receives about 60% of the above in take-home product
after processing into specialty cuts (steaks, roasts, hamburger, etc.)
Processing costs will run about 50 cents per pound on the above weights.
